Eagan Fun Facts

I recently learned in an Eagan Visitor's guide that Eagan was once known as the "Onion Capitol of the U.S." with an average yield of 10 tons per acre in the late 1800's and early 1900's!  It makes you wonder...where have all the onions gone?
